Polly Jo Carroll

Polly Jo Carroll was born on December 20, 1954 and died on March 29, 2019 with family and friends by her side. She was preceded to heaven by her son, Jonathan Abbie Carroll; her father, Holland William “Tommy” Thompson; and her mother Leta Copeland Thompson. She is survived by her husband of 41 years, Gunter Carroll; daughter, Melissa Ann Carroll; son, Holland Matthew Carroll; sister, Linda Thompson; and many other loving relatives.

Polly Jo graduated from Thomas Edison High School in 1972, and was a 2007 Phi Theta Kappa graduate of St. Philips College, where she earned her degree in Health Information Technology with certificates in Documentation and Coding Specialist.

An extremely kind person who enjoyed serving the lord by helping others, Polly taught Sunday school at Trinity Baptist Church and was a dedicated PTA member at Lee and Churchill High School. She worked for USAA, University Hospital, and started her own cleaning business in 1985 that lasted until her stroke in 2015. Above all else, she was the best wife and mother in the world.

Polly will be remembered for her generous and loving nature, humor and laughter, and common sense. She loved working in her yard and cooking, was an avid reader, and a handy woman, enjoying do-it-yourself projects. Polly always thought of others first, encouraging them to trust the Lord in all things.

A memorial of Polly’s life will be held at 3 pm, on Saturday, April 6, at Woodland Baptist Church, 15315 Huebner Road, with Pastor Garrett Vickrey officiating.
